One of my all time favorite dishes is sweet potatoes. Sweet potatoes are delicious and can be prepared so many different ways. They can be baked, roasted, fried or mashed. They also couple well with so many other foods. Today I decided to share my version of Vegan Mashed Sweet Potatoes. Instead of using butter and dairy milk I substituted with Earth Balance and coconut milk. Give this recipe a try and let us know what you think.

Ingredients
- 3 medium Organic Sweet Potatoes
- 1/4 Cup Coconut Milk Any other non-dairy milk
- 2 Tspns Earth Balance Butter Vegan
- 1/4 Tspn Sea Salt Optional
- 1/4 Tspn Lemon Extract
- 1/4 Tspn Cinnamon
- Pinch Nutmeg
- Pinch Clove

Instructions
- Put sweet potatoes in a large pot
- Add water to pot to cover potatoes
- Cook potatoes covered on medium heat until tender
- Drain potatoes in strainer and put back in the pot. Stove on simmer
- Using a potato masher, mash potatoes
- Add butter, milk, spices, salt and extra. Mix well
Recipe Notes
I cook my sweet potatoes whole with skin on. But they can be peeled and cubed to cook.
