Sweet Potato Muffins

Fall in on it’s way and one of our family favorite food is sweet potato muffin. I use a very simple recipe to make them and they are delicious.

Instructions
  1. Preheat oven to 350 degrees Pour Jiffy Mix in medium size bowl Add mix and eggs
  2. Add sweet potatoes
  3. Mix well
  4. Spray 6 cup muffin pan with non-stick baking spray
  5. Fill muffin cups half full with mixture
  6. Bake for 20 minutes check with toothpick to make sure they are done all the way through
  7. Let cool and enjoy

Mashed Sweet Potatoes

One of my all time favorite dishes is sweet potatoes.  Sweet potatoes are delicious and can be prepared so many different ways.  They can be baked, roasted, fried or mashed.  They also couple well with so many other foods.  Today I decided to share my version of Vegan Mashed Sweet Potatoes.
